(3 &#8211; 8 oz packages) cream cheese softened<br \/>\n1 cup sugar<br \/>\n3 eggs at room temperature<br \/>\n2 tsp. vanilla<br \/>\n1 cup canned pumpkin puree<br \/>\n1 tsp. cinnamon<br \/>\n1 tsp. pumpkin pie spice<br \/>\n2 large apples peeled, cored, sliced about 1\/4-inch thick<br \/>\n1 tsp. cinnamon<br \/>\n2 tbsp. sugar<\/p>\n<p><b>Streusel Topping:<\/b><br \/>\n1 cup old-fashioned oats<br \/>\n3\/4 cup all-purpose flour<br \/>\n1\/2 cup packed brown sugar<br \/>\n1 tsp. cinnamon<br \/>\n1\/2 cup cold butter<br \/>\nvanilla ice cream<br \/>\n1 jar caramel ice cream sauce<\/p>\n<p><b><u>Directions<\/u>:<\/b><br \/>\n<b>Crust:<\/b><br \/>\nIn a medium bowl, combine oatmeal cookie crumbs, oats, sugar, and butter.<br \/>\nPress into the bottom of a 9-inch springform pan.<\/p>\n<p><b>Cheesecake:<\/b><br \/>\nIn a large mixing bowl, beat cream cheese until creamy.<br \/>\nAdd sugar, beating until combined.<br \/>\nAdd eggs, one at a time, beating well after each addition.<br \/>\nAdd vanilla.<br \/>\nAdd pumpkin puree, cinnamon, and pumpkin pie spice.<br \/>\nPour cheesecake batter over crust.<br \/>\nIn a medium bowl, combine sliced apples, cinnamon, and sugar, tossing to coat.<br \/>\nCarefully layer the apple slices over the cheesecake batter, working from the edges to the center &#8211; it will keep the batter from raising higher at the edges. Work from the edges toward the middle.<\/p>\n<p><b>Streusel:<\/b><br \/>\nIn a small bowl, combine oats, flour, brown sugar, and cinnamon.<br \/>\nCut in butter until mixture is crumbly.<br \/>\nSprinkle it evenly over the apple layer, working from the edges to the center. This cheesecake will be up to the very top of the pan, and that&#8217;s okay! It&#8217;s tall, but it won&#8217;t spill over!<br \/>\nBake at 325 degrees for 70-80 minutes (it will take a while &#8211; it&#8217;s very thick), or until the center appears set when jiggled.<br \/>\nRemove to a wire rack to cool completely. Chill thoroughly, if desired.<br \/>\nRun a knife along the edges, and release springform pan.
