{"id":1201,"date":"2022-01-24T13:42:02","date_gmt":"2022-01-24T18:42:02","guid":{"rendered":"https:\/\/cookbook.maynardfolks.com\/?p=1201"},"modified":"2022-01-24T13:42:02","modified_gmt":"2022-01-24T18:42:02","slug":"red-beans-and-rice","status":"publish","type":"post","link":"https:\/\/cookbook.maynardfolks.com\/?p=1201","title":{"rendered":"Red Beans and Rice"},"content":{"rendered":"<p><b><u>Ingredients<\/u>:<\/b><br \/>\n1 cup basmati rice<br \/>\n1 tablespoon vegetable oil<br \/>\n1 (12.8-ounce) package smoked andouille sausage, thinly sliced<br \/>\n1 medium sweet onion, diced<br \/>\n1 green bell pepper, diced<br \/>\n2 celery ribs, diced<br \/>\n2 tablespoons tomato paste<br \/>\n3 cloves garlic, minced<br \/>\n1 1\/2 teaspoons Cajun seasoning, salt-free<br \/>\n3 (15-ounce) cans red beans, drained and rinsed<br \/>\n3 cups chicken stock<br \/>\n1 teaspoon hot sauce<br \/>\n1 bay leaf<br \/>\nKosher salt and freshly ground black pepper, to taste<br \/>\n2 tablespoons chopped fresh parsley leaves<\/p>\n<p><b><u>Directions<\/u>:<\/b><br \/>\nIn a large saucepan of 2 cups water, cook rice according to package instructions; set aside.<br \/>\nHeat vegetable oil in a large stockpot or Dutch oven over medium heat. Working in batches, add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes; set aside.<br \/>\nAdd onion, bell pepper and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.<br \/>\nStir in tomato paste, garlic and Cajun seasoning until fragrant, about 1 minute.<br \/>\nStir in red beans, chicken stock, hot sauce, bay leaf and sausage; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer for 15 minutes.
