{"id":1681,"date":"2024-05-19T20:31:47","date_gmt":"2024-05-20T00:31:47","guid":{"rendered":"https:\/\/cookbook.maynardfolks.com\/?p=1681"},"modified":"2024-05-21T13:17:09","modified_gmt":"2024-05-21T17:17:09","slug":"mexican-street-corn-coleslaw","status":"publish","type":"post","link":"https:\/\/cookbook.maynardfolks.com\/?p=1681","title":{"rendered":"Mexican Street Corn Coleslaw"},"content":{"rendered":"<p><b><u>Ingredients<\/u>:<\/b><br \/>\n4 c shredded cabbage, green or purple<br \/>\n1 cup shredded carrots<br \/>\n1\/2 c chopped fresh cilantro<br \/>\n1\/4 c chopped red onion<\/p>\n<p><b>Topping<\/b>:<br \/>\n2 c corn kernels (fresh, canned, or frozen)<br \/>\n2 Tbsp Mayo<br \/>\n2 Tbsp sour cream or Greek yogurt<br \/>\n1\/4 c crumbled cotija cheese (or feta)<br \/>\n1 tsp chili powder<br \/>\n1 clove minced garlic<br \/>\njuice of 1 lime<br \/>\nsalt and pepper to taste<\/p>\n<p><b>Garnish<\/b>:<br \/>\nChopped cilantro<br \/>\nlime wedges<\/p>\n<p><b><u>Directions<\/u>:<\/b><br \/>\nIn a large mixing bowl, combine shredded cabbage, carrots, cilantro, and red onion. Toss to combine, set aside.<br \/>\nIn a skillet over med-high heat, add corn kernels and cook until they are lightly charred, 5-7 min stirring occasionally.<br \/>\nIn a bowl combine mayo, sour cream\/yogurt, crumbled cheese, chili powder, smoked paprika, garlic, lime juice, salt, and pepper, mix until well combined.<br \/>\nAdd the charred corn kernels to the bowl with the dressing mixture. Stir until the corn is evenly coated with the dressing.<br \/>\nPour Mexican street corn topping over the coleslaw mixture in the large mixing bowl.
