{"id":173,"date":"2014-12-17T03:25:30","date_gmt":"2014-12-17T03:25:30","guid":{"rendered":"https:\/\/cookbook.maynardfolks.com\/?p=173"},"modified":"2014-12-17T03:25:30","modified_gmt":"2014-12-17T03:25:30","slug":"mexican-tortilla-casserole","status":"publish","type":"post","link":"https:\/\/cookbook.maynardfolks.com\/?p=173","title":{"rendered":"Mexican Tortilla Casserole"},"content":{"rendered":"<p><a href=\"https:\/\/cookbook.maynardfolks.com\/wp-content\/uploads\/2014\/12\/mex_tort_cass.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-174\" src=\"https:\/\/cookbook.maynardfolks.com\/wp-content\/uploads\/2014\/12\/mex_tort_cass-150x150.jpg\" alt=\"mex_tort_cass\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>1lb. ground beef<br \/>\n1\/2 cup diced onion<span class=\"text_exposed_show\"><br \/>\n1 pack taco seasoning mix<br \/>\n2 cups shredded cheddar cheese<br \/>\n1 can refried beans (they spread easier if you warm them in microwave)<br \/>\n1 cup prepared rice (I used Minute Rice)<br \/>\n1 can Mexican blend corn (DRAINED)will only use about 1\/2 can<br \/>\n4-5 large flour tortillas<br \/>\n8 oz of thick chunky salsa (your choice mild or hot)<\/span><\/p>\n<p>Spray a spring form, round cake pan or casserole with cooking spray<br \/>\nBrown ground beef ,and onion and drain<br \/>\nAdd taco seasonings and cook according to package direction<br \/>\nLay 1 tortilla in bottom of baking dish and spread 1\/3 of bean on it ,top with 1\/3 of the meat and sprinkle on some cheese .<br \/>\n2nd layer tortilla, 1\/2 the rice, 1\/2 salsa, 1\/2 the corn and cheese<br \/>\n3rd layer tortilla, 1\/3 beans ,1\/3meat, cheese<br \/>\n4 layer tortilla . beans ,meat, corn, rice, salsa and cheese<\/p>\n<p>Bake covered with foil at 350 for about 40 minutes uncover and bake 10-15 minutes longer. let sit 5 minutes before cutting .
