Then do a series of stretch and folds, and let rest for 30min followed by another set of stretch and folds, and then repeat once more. After 3 series of stretch and folds, let dough rise for 1.5hrs in a cast iron skillet coated liberally with olive oil. Last rise can take place in an oven with the light on.
