{"id":1939,"date":"2026-05-14T11:21:25","date_gmt":"2026-05-14T15:21:25","guid":{"rendered":"https:\/\/cookbook.maynardfolks.com\/?p=1939"},"modified":"2026-05-14T11:21:25","modified_gmt":"2026-05-14T15:21:25","slug":"viral-chopped-la-scala-salad","status":"publish","type":"post","link":"https:\/\/cookbook.maynardfolks.com\/?p=1939","title":{"rendered":"Viral Chopped La Scala Salad"},"content":{"rendered":"<p><b><u>Ingredients<\/u>:<\/b><br \/>\n1.5 heads iceberg lettuce, thinly sliced<br \/>\n1 cup sliced salami<br \/>\n1 can chickpeas, drained and rinsed<br \/>\n1 cup mozzarella cheese<br \/>\n1\/4 cup pepperoncinis, chopped<br \/>\n1 small to medium red onion, super thinly sliced<br \/>\n<b>Dressing<\/b>:<br \/>\n1\/4 cup red wine vinegar<br \/>\n1\/3 cup extra virgin olive oil<br \/>\n2 tsp Dijon mustard<br \/>\n1 garlic clove, finely grated<br \/>\n1 tsp dried oregano<br \/>\n1 to 2 Tbsp pepperoncini juice<br \/>\nSalt and black pepper to taste<br \/>\n1\/4 cup finely grated Parmesan<\/p>\n<p><b><u>Directions<\/u>:<\/b><br \/>\nAdd all salad ingredients to a large bowl. Whisk the dressing together until smooth, then pour it over the salad. Toss everything really well until fully coated.
