Ingredients:
8 slices bacon, chopped
4 chicken breasts (seasoned w/ 2 tsp Montreal chicken, 1 tsp Creole, 1 tbsp garlic powder, 1 tsp black pepper, 2 tsp Italian)
1 small onion, diced
4 garlic cloves, minced
2 carrots
2 celery stalks, diced
1/2 cup sun-dried tomatoes
2 tbsp tomato paste
1/3 cup flour
6 cups chicken broth
3 oz Boursin cheese
2 cups heavy cream (or dairy-free alt)
Basil, Creole, oregano, sage, thyme, red pepper
10 oz cheese tortellini
Handful chopped spinach (optional)
Directions:
Crisp bacon, set aside.
Sear chicken, dice, set aside.
Sauté veggies + sun-dried tomatoes.
Stir in tomato paste, flour (make roux).
Add broth, Boursin, cream.
Season, simmer.
Add tortellini, spinach, chicken. Top w/ bacon.
