Smoked Sausage Chili

Ingredients:

  • 1lb lean ground beef
  • 1lb ground pork
  • 1lb smoked sausage sliced and halved
  • 2-3 Tbsp olive oil
  • 2 Tbsp cumin
  • 2 Tbsp chili powder
  • 1 Tbsp garlic powder
  • 1 medium onion diced
  • 3 cloves of garlic minced
  • 1/4 to 1 hot chile pepper minced, seeds removed
  • Juice of 1 lime
  • 1 12oz dark beer
  • 2 15oz cans tomato sauce
  • 1 can diced tomatoes
  • 1 can rotel
  • 1 cup spicy V8 tomato juice
  • 1/2 cup medium pace picante sauce
  • 1 can pinto beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 package sweet corn frozen

Directions

  • In a large pot, heat up olive oil, then saute diced onion for 2-3 mins, then add minced garlic and saute for another min or 2, and season with salt and pepper
  • Add in ground beef and pork and cook until brown, drain if desired, season with more salt and pepper and garlic powder
  • Add in minced pepper and chopped sausage along with the chili powder, cumin, and lime juice cook for 2-3 mins allowing flavors to meld
  • Deglaze pan with dark beer, and add in all ingredients except for the corn. Allow to come to a boil, then reduce heat and simmer for at least 45 mins.
  • Bring back to a boil and add in corn, allow boil to return and to boil for 5 mins.
