Ingredients:
- 1lb lean ground beef
- 1lb ground pork
- 1lb smoked sausage sliced and halved
- 2-3 Tbsp olive oil
- 2 Tbsp cumin
- 2 Tbsp chili powder
- 1 Tbsp garlic powder
- 1 medium onion diced
- 3 cloves of garlic minced
- 1/4 to 1 hot chile pepper minced, seeds removed
- Juice of 1 lime
- 1 12oz dark beer
- 2 15oz cans tomato sauce
- 1 can diced tomatoes
- 1 can rotel
- 1 cup spicy V8 tomato juice
- 1/2 cup medium pace picante sauce
- 1 can pinto beans drained and rinsed
- 1 can kidney beans drained and rinsed
- 1 package sweet corn frozen
Directions
- In a large pot, heat up olive oil, then saute diced onion for 2-3 mins, then add minced garlic and saute for another min or 2, and season with salt and pepper
- Add in ground beef and pork and cook until brown, drain if desired, season with more salt and pepper and garlic powder
- Add in minced pepper and chopped sausage along with the chili powder, cumin, and lime juice cook for 2-3 mins allowing flavors to meld
- Deglaze pan with dark beer, and add in all ingredients except for the corn. Allow to come to a boil, then reduce heat and simmer for at least 45 mins.
- Bring back to a boil and add in corn, allow boil to return and to boil for 5 mins.
