White Chicken Chili

Ingredients:
1 Yellow onion diced
2 cloves minced garlic (I used the already minced garlic bc it’s convenient)
1/2 cup heavy cream
1 48oz chicken broth (you can use less or more depending on how much you want)
3 cans diced green chilis
1 tbs olive oil
1 tsp cumin
1 tsp oregano
1/4 tsp cayenne pepper
2 cans (drained, and I like to rinse them too) cannellini beans
1 can or 1 small bag frozen corn (drained and rinsed as well)
3-4 cups shredded chicken (I prefer to dice mine for texture reasons)
Salt and pepper to taste.

Topping Ideas:
Shredded cheese (Colby Jack/mozzarella, your choice)
Cilantro
Sliced/diced avocado
Lime juice
Plain yogurt

Directions:
Brown/caramelize onion in the olive oil
Then add in all ingredients

Bring it to a boil (to thicken)
The summer with lid for about 15 minutes.

Stir in cheese

Add the toppings you like to your serving.
