Corn Dip and Spicy Ranch Crackers

Serve this dip with spicy Ranch crackers. Recipe Below.

3 cans Mexicorn (drained)

1 can chopped green chilis

1 bunch green onions (chopped)

1 cup Hellman’s Mayo

1 Tablespoon chopped jalapeno

1 1/2 cup grated cheese

1 cup sour cream

Mix all ingredients together and chill for an hour or so.

 

Spicy Ranch Crackers

3/4 cup olive or canola oil

1 pkg. Ranch Salad Dressing mix

1 Tablespoon cayenne pepper

3 sleeves saltine crackers

Mix first three ingredients together in a large freezer bag until well mixed. Add the crackers and toss to coat thoroughly. You would think these would get soggy, but they don’t and they are deliciously addicting.
