1 lb. ground beef
1/3 cup finely diced onion
1/3 cup finely diced bell pepper
2-3 minced garlic cloves
1 small can tomato sauce
salt and pepper to taste
1 tbsp. flour
1/2 pound elbow macaroni (more or less to taste) cooked until al dente
8 ounces grated sharp cheddar cheese
Brown ground beef with onion, bell pepper and salt and pepper. Add garlic and cook for about 3 more minutes on medium heat. Add tomato sauce and cook on low simmer for 10 minutes. If mixture seems too soupy, add the flour a little at a time, stirring and simmering until it becomes a little thicker.
Pour meat mixture into a casserole dish. Pour pasta over meat. Sprinkle with cheddar cheese and bake for 15-20 minutes or until the cheese begins to bubble.
