Ingredients:
1 lb. lean ground meat
1 medium onion, chopped
1/2 cup Pace Picante Sauce
1 1/2 cup Minute Rice, cooked by package directions
Salt and Pepper to taste
1 can Ro-tel tomatoes
1 12 oz. can Ranch Style Beans
1 lb. grated sharp cheddar cheese
Brown meat and onion and drain excess fat. Add the other ingredients except the cheese and simmer until slightly thickened. Put half of the meat mixture in a 9 x 13 baking dish. Add half the cheese. Repeat layers, ending with cheese. Bake at 300 until the cheese is melted and the casserole is bubbly.
