Afternoon Pizza

Ingredients:
300g Bread Flour
210g Warm Water (~100 F)
6g salt
6g sugar
6g instant yeast
10g olive oil

Sauce:
Can cento tomatoes, crushed
Add salt, pepper, garlic, herbs, whateva

Directions:
Mix all ingredients except in a large bowl, then knead a few mins and let it rest for 30min. Then do a series of stretch and folds, and let rest for 30min followed by another set of stretch and folds, and then repeat once more. After 3 series of stretch and folds, let dough rise for 1.5hrs in a cast iron skillet coated liberally with olive oil. Last rise can take place in an oven with the light on. While it is rising, mix up sauce and grate/prepare toppings.
Par bake crust for 15min at 500 F
Then load up toppings and put it back in the oven for 10min or so and finish off under the broiler
