Pumpkin Roll

Cake:
Combine:

3 eggs beaten

1 cup sugar

1/2 tsp. Cinnamon

2/3 cup pumpkin

 

In separate bowl:

3/4 cup flour

1 tsp. Baking soda

 

Combine egg mixture with pumpkin mixture and mix well until smooth.

Place parchment paper completely over a cookie sheet and spread the mixture evenly over pan.

Heat oven to 375 and bake for 15 minutes. Remove and let the cake cool enough to touch and place on a cotton towel, roll up the towel and let cool completely.

 

Frosting:

2 Tbsp. softened butter

8 ounces softened cream cheese

1 cup confectioners sugar

1/4 tsp. vanilla

Mix until smooth.

Unroll, spread frosting and roll it and wrap it in saran wrap and refrigerate. Cut in half then slice each half into serving sized pieces.
