Memaw’s Pickled Okra

3 lbs. Okra
3 Cups Heinz White Vinegar
3 Cups Water
6 Tbsp Pickling Salt
12 Heads of Dill (1 1/2 Tbsp of Dill Seed)
1 Red Pepper to each pint jar (or 2 for more spice)
2 large garlic pods sliced thin
1/2 tsp of mustard seed in each jar

Use small tender pods of okra, cut with as much stem as possible (Do not cut into okra pod). Wash and drain then prick each pod with pin or fine pointed knife to allow solution to enter pod. Boil water, vinegar and salt until salt is dissolved. Fill jars with boiling brine to within 1/2 inch of top. Process in boiling water bath for 5 minutes.
