Nancy Corbin’s Curried Rice and Pea Salad

Ingredients:
1 1/3 cups pre-cooked rice
1 1/2 cups water
1/2 tsp salt
1/4 cup French dressing
3/4 cup Mayonnaise
1 Tbsp minced onion
3/4 tsp curry powder
1/2 tsp salt
1/8 tsp pepper
1/2 tsp dry mustard
1 cup dice celery
1 1/3 cups chilled frozen peas

Directions:
In a saucepan combine rice, water, 1/2 tsp salt and cook as label directs. Lightly toss in French dressing and allow to cool to room temperature.
About an hour before serving, combine in large bowl, mayo, onion, curry, salt, pepper, and mustard. Add celera, peas, and rice and toss lightly.
Refrigerate until ready to serve.
