Broccoli, Cheese and Rice Casserole

Broccoli, Cheese and Rice Casserole

1/4 cup chopped celery (optional)

1/4 cup chopped onion

10 ounce box of frozen chopped broccoli or a bag of the stuff you steam in the microwave is easier

1 cup Minute Rice (uncooked)

1 small jar of Cheese Whiz (8 ounce) or 8 ounces of Mild Mexican Velveeta cut in small cubes

1 10 3/4 ounce can of cream of chicken soup

Preheat theĀ oven to 350 degrees and spray a loaf pan with cooking spray. Cook broccoli according to package directions, drain, and set aside, but don’t let it get cool. If you are using the Velveeta cheese you may want to soften it in the microwave a little before using. Mix the remaining ingredients in a medium mixing bowl and add the hot broccoli and mix well. Transfer to the prepared baking dish and bake for 30 minutes. Check to make sure the rice is no longer firm before serving. If it’s still a little firm, bake it a little longer.
